Italian Sausage Ragu

Ingredients

  • 16 oz. Italian sausage
  • ½ cup yellow onion, diced
  • 3 tsp. minced garlic
  • ½ tsp. crushed red pepper
  • 2 cups chicken broth
  • ¼ cup white wine
  • 1 cup heavy whipping cream
  • 1 cup 4Sisters Arborio rice, cooked according to package directions
  • ½ cup grated parmesan cheese
  • 2 cups fresh baby spinach
  • salt & pepper, to taste

Instructions

  1. Sauté the Italian sausage, onion, & garlic over medium heat until meat is cooked, and onions are tender.
  2. Stir in the red pepper flakes, broth, white wine, & cream. Reduce the heat and cook for 10 minutes, uncovered, stirring often.
  3. Remove from heat, stir in cooked arborio, parmesan cheese, spinach, salt, & pepper. Cover until spinach wilts and cheese melts.
