Indonesian Rice Bowl

Ingredients

  • 1 cup 4Sisters jasmine rice, cooked
  • 2 ½ cups fresh or frozen petite peas
  • 2 ½ cups cooked chicken breast, shredded
  • ½ cup hot chicken broth

Sauce:

  • 1/3 cup peanut butter
  • ½ cup chicken broth
  • 1 tbsp. dry sherry
  • 2 tbsp. rice vinegar
  • 2 tsp. ginger
  • ¼ tsp. cayenne pepper
  • ½ tsp. sugar
  • 2 green onions, chopped (save green tops for garnish)
  • ½ cup roasted peanuts, chopped

Instructions

  1. In a large bowl, combine peas, shredded chicken, & hot chicken broth. Set aside.
  2. To make the sauce, combine all sauce ingredients into a pan and warm over low heat. Stirring until smooth, about 2 minutes.
  3. To serve, scoop jasmine rice in a bowl, top with chicken & pea mixture, & drizzle with peanut sauce.
  4. Garnish with toppings of your choice! We like green onions, golden raisins, chopped peanuts, or toasted coconut.
