
Healthy Pizza With Cheesy Rice Crust

- White Rice
Ingredients
Crust:
- 3 cups cooked 4Sisters white rice
- 3 large egg yolks (discard whites)
- ¼ cup sour cream
- ½ cup blend of mozzarella & parmesan cheese
Topping:
- Bell peppers strips, any color
- Yellow or red onion slivers
- Fresh sliced mushrooms
- Black olives
- Jalapeños
- Rotisserie chicken, shredded
- Pepperoni, regular or turkey
- Ground sausage or ground beef, cooked & drained
- Canadian Bacon
Instructions
- Preheat oven to 400 degrees.
- Spread rice mixture as this as possible, about ¼ inch think, onto parchment paper placed on a 14-inch round pizza pan. A large rectangle cookie sheet will work, too.
- Bake for 20 minutes, until browned.
- Spread cooked rice crust with one small can of tomato paste, or sauce of your choosing.
- Add any of suggested vegetables and/or meats after sauce.
- Drizzle toppings with about ¼ cup ranch dressing.
- Finally, top with 1 cup shredded mozzarella & parmesan blend, or desired cheese
- Bake an additional 15 minutes or until desired doneness at 400 degrees with toppings.
