
Egg Roll in a Bowl

Ingredients
- 1 lb. lean ground beef
- 1 tbsp. oil
- 1 tsp. salt
- ½ tsp. ground black pepper
- ½ cup chopped yellow onion
- 1 cup shredded or julienned fresh carrots
- 1 tbsp. minced garlic
- 1 bag angel hair cabbage (finely shredded) or cabbage of your choice, shredded
- 1 tsp. minced ginger
- ¼ cup low sodium soy sauce
- 2 tsp. sesame oil
- ½ tsp. white sugar
- Green onion or chives for garnish
- Sweet & Sour Sauce or Soy Sauce for drizzling
- 4Sisters brown rice, cooked in beef broth, if desired, according to pkg. directions
Plum Sauce for Drizzle (optional):
- 1 cup plum jelly
- 2 tbsp. sweet chili sauce
- 2 tbsp. rice vinegar
- 1 tsp. soy sauce
- ½ tsp. minced garlic
Instructions
- Brown ground beef in a large skillet over medium high heat until meat is done.
- Add salt, pepper, yellow onion, carrots, & garlic. Cook until onion & carrots are tender, about 5-6 minutes, stirring occasionally.
- Add cabbage, ginger, soy sauce, sesame oil, & sugar. Continue to cook another 5-6 minutes, stirring occasionally, or until cabbage is tender.
- Mix all plum sauce ingredients together and warm slightly. Set aside.
- Serve cabbage & beef mixture over 4Sisters cooked brown rice. Garnish with green onion, sesame seeds, & drizzle with plum sauce, your favorite egg roll sauce, or soy sauce, if desired.
