
Easter Pie

Ingredients
Rice Ingredients:
- 1 cup 4Sisters Arborio rice
- 2 cups whole milk
- 4 tbsp. butter
- 1 tsp. salt
- 1 tsp. vanilla flavoring
- 2 large strips lemon peel
- 2 large strips orange peel
- Cook the rice according to pkg. directions, using milk vs. water, with all ingredients listed above.
- Remove lemon and orange peel after cooking and let cool.
Pie Filling:
- Preheat oven to 350 degrees.
- 1 – 9-inch pie crust (pre-made or homemade), sprinkle bottom with a little cinnamon and white sugar
- 1 ½ cups full fat ricotta cheese, drain if needed
- 4 lg. eggs, whisked until frothy
- 4 tbsp. unsalted butter, melted
- 1 ½ cups white sugar
- 1 tsp. vanilla flavoring
- 1 tsp. lemon juice
- 1 tsp. lemon zest
- 1 tsp. orange zest
- Cooked 4Sisters Arborio rice
Topping:
- Cinnamon, powdered sugar, & honey
Instructions
- Pour all filling ingredients into a prepared 9-inch pie crust.
- Bake for 50-60 minutes until golden brown or center is firm.
- Dust with cinnamon and powdered sugar, drizzle with honey to serve.
