Easter Pie

Ingredients

Rice Ingredients:

  • 1 cup 4Sisters Arborio rice
  • 2 cups whole milk
  • 4 tbsp. butter
  • 1 tsp. salt
  • 1 tsp. vanilla flavoring
  • 2 large strips lemon peel
  • 2 large strips orange peel
  • Cook the rice according to pkg. directions, using milk vs. water, with all ingredients listed above.
  • Remove lemon and orange peel after cooking and let cool.

Pie Filling:

  • Preheat oven to 350 degrees.
  • 1 – 9-inch pie crust (pre-made or homemade), sprinkle bottom with a little cinnamon and white sugar
  • 1 ½ cups full fat ricotta cheese, drain if needed
  • 4 lg. eggs, whisked until frothy
  • 4 tbsp. unsalted butter, melted
  • 1 ½ cups white sugar
  • 1 tsp. vanilla flavoring
  • 1 tsp. lemon juice
  • 1 tsp. lemon zest
  • 1 tsp. orange zest
  • Cooked 4Sisters Arborio rice

Topping:

  • Cinnamon, powdered sugar, & honey

Instructions

  1. Pour all filling ingredients into a prepared 9-inch pie crust.
  2. Bake for 50-60 minutes until golden brown or center is firm.
  3. Dust with cinnamon and powdered sugar, drizzle with honey to serve.
