Creamy Basil Pesto Shrimp

Ingredients

  • 2 tablespoons unsalted butter
  • 1 lb. steamed or boiled, peeled & cooked large shrimp
  • salt & pepper, to taste
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • ½ cup basil pesto, homemade or prepared
  • ½ cup heavy whipping cream or half & half for a lighter sauce
  • 4Sisters cooked white or brown rice
  • Top with parmesan cheese if desired

Instructions

  1. In a large skillet, melt the butter over medium to medium high heat.
  2. Add the cooked, boiled and peeled shrimp to the mixture, salt and pepper and cook 1-2 minutes until shrimp is hot, do not overcook.
  3. Mix the basil pesto and ½ cup cream or half & half together.
  4. Add the pesto and cream mixture to the melted butter.
  5. Serve over 4Sisters cooked brown or white rice.
  6. Top with parmesan cheese if desired.
  7. (Raw shrimp can be cooked in the melted butter 2-4 minutes until shrimp are pink, before adding the pesto and cream).
