
Creamy Basil Pesto Shrimp
Ingredients
- 2 tablespoons unsalted butter
- 1 lb. steamed or boiled, peeled & cooked large shrimp
- salt & pepper, to taste
- 1 teaspoon of salt
- ½ teaspoon of black pepper
- ½ cup basil pesto, homemade or prepared
- ½ cup heavy whipping cream or half & half for a lighter sauce
- 4Sisters cooked white or brown rice
- Top with parmesan cheese if desired
Instructions
- In a large skillet, melt the butter over medium to medium high heat.
- Add the cooked, boiled and peeled shrimp to the mixture, salt and pepper and cook 1-2 minutes until shrimp is hot, do not overcook.
- Mix the basil pesto and ½ cup cream or half & half together.
- Add the pesto and cream mixture to the melted butter.
- Serve over 4Sisters cooked brown or white rice.
- Top with parmesan cheese if desired.
- (Raw shrimp can be cooked in the melted butter 2-4 minutes until shrimp are pink, before adding the pesto and cream).
