
Crawfish Dip

Ingredients
- 1 stick unsalted butter
- 1 pkg. frozen seasoning blend (onion, red bell pepper, green bell pepper, celery)
- 1 tbsp. Tony Chachere's
- 2 tsp. Old Bay seasoning
- 1 tbsp. minced garlic
- ½ cup flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tbsp. lemon juice
- 1 lb. crawfish tails
- 1 cup pepper jack
- 1 cup 4Sisters white rice
- Chips, Fritos, or saltine crackers for dipping
Instructions
- Sauté the seasoning blend and garlic in the butter until vegetables are tender.
- In a 2-cup measuring cup add chicken broth, flour, Tony’s and Old Bay, whisk well, add to the hot cooked vegetables and heat until thickened.
- Slowly stir in the heavy cream, lemon juice, & crawfish tails. Cook on low for 15 minutes.
- Stir in cooked 4Sisters rice.
- Serve hot with chips or crackers. (Great filling for crawfish enchiladas or crawfish pie)
