Crawfish Dip

Ingredients

  • 1 stick unsalted butter
  • 1 pkg. frozen seasoning blend (onion, red bell pepper, green bell pepper, celery)
  • 1 tbsp. Tony Chachere's
  • 2 tsp. Old Bay seasoning
  • 1 tbsp. minced garlic
  • ½ cup flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tbsp. lemon juice
  • 1 lb. crawfish tails
  • 1 cup pepper jack
  • 1 cup 4Sisters white rice
  • Chips, Fritos, or saltine crackers for dipping

Instructions

  1. Sauté the seasoning blend and garlic in the butter until vegetables are tender.
  2. In a 2-cup measuring cup add chicken broth, flour, Tony’s and Old Bay, whisk well, add to the hot cooked vegetables and heat until thickened.
  3. Slowly stir in the heavy cream, lemon juice, & crawfish tails. Cook on low for 15 minutes.
  4. Stir in cooked 4Sisters rice.
  5. Serve hot with chips or crackers. (Great filling for crawfish enchiladas or crawfish pie)
