Ingredients

  • 2-3 lbs of shrimp, cooked, peeled, & cleaned
  • 1 cup 4Sisters parboiled rice, cooked
  • 1 cup sharp cheddar cheese, grated
  • 1 ½ cups heavy whipping cream
  • ½ cup red bell pepper, chopped
  • ½ cup green onion, chopped
  • ½ cup celery, chopped
  • 1 stick butter
  • 8 lemons, sliced very thin

Instructions

  1. In large bowl, mix shrimp, rice, and cheddar cheese.
  2. In a skillet over medium-high heat, melt butter then sauté mushrooms, green onions, celery, and bell pepper. Add to shrimp mixture.
  3. Stir in your heavy whipping cream and mix well.
  4. Pour creamy shrimp mixture into a 9x13 greased casserole dish. Completely cover the top with fresh lemon slices.
  5. Bake at 375 for 20 minutes until cheese is melted. Plate and serve!
