Chicken & Waffles

White Rice

Ingredients

  • 2 cups cooked 4Sisters white rice (cook according to pkg. directions)
  • 1 cup cornbread mix, (we used Jiffy cornbread mix which has a little sweetness)
  • 2 cups cooked chicken
  • 2, 4-oz. can chopped green chiles
  • 1 cup grated sharp cheddar cheese
  • ½ cup chopped yellow onion
  • 4 large eggs

Instructions

  1. Mix all ingredients.
  2. Preheat a Belgium waffle iron.
  3. Spray waffle iron with non-stick spray before cooking each waffle.
  4. Add about 2/3 cup-¾ cup mixture to the waffle iron.
  5. Cook about 6 minutes each or until your waffle iron indicates done.
  6. Simply drizzle with honey and enjoy or top with sour cream, salsa, avocado, jalapeño, etc.

Notes

  • Makes about 4-6 Belgium waffles.
