
Chicken & Waffles

Ingredients
- 2 cups cooked 4Sisters white rice (cook according to pkg. directions)
- 1 cup cornbread mix, (we used Jiffy cornbread mix which has a little sweetness)
- 2 cups cooked chicken
- 2, 4-oz. can chopped green chiles
- 1 cup grated sharp cheddar cheese
- ½ cup chopped yellow onion
- 4 large eggs

Instructions
- Mix all ingredients.
- Preheat a Belgium waffle iron.
- Spray waffle iron with non-stick spray before cooking each waffle.
- Add about 2/3 cup-¾ cup mixture to the waffle iron.
- Cook about 6 minutes each or until your waffle iron indicates done.
- Simply drizzle with honey and enjoy or top with sour cream, salsa, avocado, jalapeño, etc.
Notes
- Makes about 4-6 Belgium waffles.
