
Chicken & Rice Crepes

Ingredients
Filling:
- 4 cups cooked chicken, diced
- 1 cup fresh mushrooms, chopped
- ½ cup yellow onion, chopped
- ¼ cup unsalted butter
- 2 cups grated Swiss cheese
- ½ tsp. salt
- ¼ tsp. black pepper
- 1 cup cooked 4Sisters brown rice
- Prepared Crepes
Sauce:
- ¼ cup all-purpose flour
- ¼ cup butter, melted
- ½ cup sherry or cooking sherry
- 1 cup chicken broth
- 2 cups heavy cream
- 2 cups grated Swiss cheese, to top crepes
Instructions
- Grease a 9x13 baking dish and preheat oven to 350 degrees.
- Mix all ingredients for crepe filling in a large bowl and set aside to prepare the sauce.
- Combine all sauce ingredients and mix together well.
- To assemble crepes, use ½ cup crepe filling per crepe, roll up, and place in greased baking dish.
- Pour sauce over crepes, top with additional grated Swiss cheese.
- Bake about 20 minutes until hot and cheese is melted and slightly brown on top.
- Serve and enjoy!
