Chicken & Rice Crepes

Ingredients

Filling:

  • 4 cups cooked chicken, diced
  • 1 cup fresh mushrooms, chopped
  • ½ cup yellow onion, chopped
  • ¼ cup unsalted butter
  • 2 cups grated Swiss cheese
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 1 cup cooked 4Sisters brown rice
  • Prepared Crepes

Sauce:

  • ¼ cup all-purpose flour
  • ¼ cup butter, melted
  • ½ cup sherry or cooking sherry
  • 1 cup chicken broth
  • 2 cups heavy cream
  • 2 cups grated Swiss cheese, to top crepes

Instructions

  1. Grease a 9x13 baking dish and preheat oven to 350 degrees.
  2. Mix all ingredients for crepe filling in a large bowl and set aside to prepare the sauce.
  3. Combine all sauce ingredients and mix together well.
  4. To assemble crepes, use ½ cup crepe filling per crepe, roll up, and place in greased baking dish.
  5. Pour sauce over crepes, top with additional grated Swiss cheese.
  6. Bake about 20 minutes until hot and cheese is melted and slightly brown on top.
  7. Serve and enjoy!
