Cheesy Pepperoni Rice Muffins

Ingredients

  • 4 cups cooked 4Sisters organic white rice
  • 2 cups Swiss cheese, shredded
  • 6 ounces regular or turkey pepperoni, quartered
  • 2 tbsp. everything bagel seasoning
  • 4 large eggs, whisked
  • ½ cup parmesan cheese, shredded
  • *Your favorite red sauce or marinara sauce for dipping, if desired

Instructions

  1. Preheat oven to 375 degrees.
  2. Grease a 12-cup muffin pan.
  3. In a large bowl, combine all ingredients, except the dipping sauce.
  4. Scoop or spoon into muffin tin.
  5. Bake about 18 minutes or until firm and golden brown.
  6. Remove from oven, let cool, remove from pan.
  7. Serve with marinara sauce for dipping, if desired.
  8. Great as a snack or make it a meal with a side salad or steamed veggie.

Notes

  • Makes 12 muffins. Can be frozen after baking and cooling.
