
Cheesy Pepperoni Rice Muffins

- Organic White Rice
Ingredients
- 4 cups cooked 4Sisters organic white rice
- 2 cups Swiss cheese, shredded
- 6 ounces regular or turkey pepperoni, quartered
- 2 tbsp. everything bagel seasoning
- 4 large eggs, whisked
- ½ cup parmesan cheese, shredded
- *Your favorite red sauce or marinara sauce for dipping, if desired
Instructions
- Preheat oven to 375 degrees.
- Grease a 12-cup muffin pan.
- In a large bowl, combine all ingredients, except the dipping sauce.
- Scoop or spoon into muffin tin.
- Bake about 18 minutes or until firm and golden brown.
- Remove from oven, let cool, remove from pan.
- Serve with marinara sauce for dipping, if desired.
- Great as a snack or make it a meal with a side salad or steamed veggie.
Notes
- Makes 12 muffins. Can be frozen after baking and cooling.
