
Broccoli & Feta Rice Bake

Ingredients
- 1 cup cooked 4Sisters organic brown rice
- 2 cups fresh broccoli florets
- 1 ¼ cup unbleached flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 cup milk
- 2 eggs, lightly beaten
- ¼ cup butter, melted
- 6 oz. package herb flavor feta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup shredded parmesan cheese
- 4 green onions, chopped, tops and bottoms
Instructions
- Preheat oven to 375 degrees. Grease a 10x6 or 8x8, baking dish.
- Cook rice according to package directions or use 1 cup leftover brown rice.
- Steam broccoli florets for 1-2 minutes only, do not overcook, cool with cold water or ice, set aside.
- In a large mixing bowl, mix the flour, baking powder, & salt. Stir in the milk, eggs, & butter.
- Fold in the feta, mozzarella, parmesan, green onion, & steamed broccoli.
- Bake 45 minutes, or until golden brown.
- Cool and slice into desired size brownies.
- Serve as a main course with a salad, or as a side dish, or an appetizer cut into small squares, or a simple snack.
