Broccoli & Feta Rice Bake

Ingredients

  • 1 cup cooked 4Sisters organic brown rice
  • 2 cups fresh broccoli florets
  • 1 ¼ cup unbleached flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup milk
  • 2 eggs, lightly beaten
  • ¼ cup butter, melted
  • 6 oz. package herb flavor feta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup shredded parmesan cheese
  • 4 green onions, chopped, tops and bottoms

Instructions

  1. Preheat oven to 375 degrees. Grease a 10x6 or 8x8, baking dish.
  2. Cook rice according to package directions or use 1 cup leftover brown rice.
  3. Steam broccoli florets for 1-2 minutes only, do not overcook, cool with cold water or ice, set aside.
  4. In a large mixing bowl, mix the flour, baking powder, & salt. Stir in the milk, eggs, & butter.
  5. Fold in the feta, mozzarella, parmesan, green onion, & steamed broccoli.
  6. Bake 45 minutes, or until golden brown.
  7. Cool and slice into desired size brownies.
  8. Serve as a main course with a salad, or as a side dish, or an appetizer cut into small squares, or a simple snack.

  • Makes up to 12 squares.
