Black Bean & Sausage Soup

Ingredients

  • ½ cup of 4Sisters White Rice, uncooked
  • 1 cup of sausage, sliced
  • 1 red bell pepper, diced
  • 1 can of black beans, drained
  • 1 cup of seasoning blend (onion, celery red, & green bell pepper)
  • 1 Knorr beef bouillon cube
  • 3 tbsp. minced garlic
  • ½ tsp. thyme
  • ½ tsp. basil
  • 1 tsp. cumin
  • 6 cups of water

Instructions

  1. Brown sausage in a soup pot over medium-high heat, scraping up the yummy bits off of the bottom.
  2. Add seasoning blend mix and red bell pepper to browned sausage, cooking until onions are translucent and red bell pepper is tender.
  3. Stir in minced garlic to your sausage vegetable mixture. Season mixture with a crumbled beef bouillon cube, thyme, basil and cumin.
  4. Add 1 can of black beans and water to your soup pot, bringing water to a boil.
  5. Once boiling, add your uncooked white rice to the soup pot. Stir occasionally until rice is cooked, about 15 minutes.
  6. Serve alongside cornbread or crackers and a salad.
  7. Enjoy!
